What is a monkeybox?

When I was a little girl, we had a pet monkey named Amanda. My Dad worked in the produce business, so each night he brought home that days culls in a big box - spotty cucumbers, pithy apples, limp celery, moldy oranges and the like. We called it a monkeybox. It was really just trash, but my Mom would take each piece of fruit and trim it, pare it and cut it up to make a beautiful fruit platter for Amanda. Even though it was deemed trash by one, it still had life left in it and was good for the purpose we needed it. That's how I live my life - thrifting, yard saling, looking for another's trash to be my treasure.

Family Taco Night

Around our house, we eat Mexican food about three times a week.  We love Burritos, Tostadoes, Mexican Chicken Casserole and our very favorite - TACOS!  Since we don't eat meat, we use Refried Beans in all of our creations.  The Breadman and I always loved Refried Beans, but it took several years (about 13 years, actually) to get THE BEAN (oddly named, huh?) to try them.  I finally persuaded him to try a can of Bean Dip one day.  He said it was good and asked what sort of dip it was.  I just kept telling him it was Chip Dip - Dip for Chips, etc. until he had knocked off the entire can. Ha! Then I told him it was BEANS.  He's been devouring all things Mexican ever since.

    My entire family loves Mexican! My sons favorite is my Taco Pie which is pretty much a taco just crusthed up into a casserole dish and baked with a lot of cheesy goodness.

  10. OMG! I love Mexican food like you wouldn't believe. It's a ritual around here on Fridays yo go out for Mexican. Tostadas are my favorite too!

  11. Enchilladas are our 'go to' meal when neither of us are feeling too motivated !! We always have tortilla shells & ground beef in the freezer and the rest of the makings in the pantry... 'just in case'! We have the 'recipe' taped inside a cupboard door, and 'the drill' down to a science. DH does all of the stove top/ beef cooking and I do all of the gathering & prep & measuring.... then we both fill and roll the shells... ((POOF)) 25 minutes later, a COMPLETE meal! Gotta love that!

    Mexican seems to be the one type of food that both DH & I can agree on 8-) (TEQUILA?!!)

    ...now to get him to make FRIED ICE CREAM for me.... hmmmmmm

  14. In London I saw a TV commercial for Old El Paso EXTRA mild fajita kits. That cracked me up--those people eat spicy Indian curries all the day long, yet Mexican food has to be not just mild, but EXTRA mild for them to touch it. LOL
